The AOP Minervois wines of Château Mignan

Recognised as an AOC in 1985, Minervois stretches between the Montagne Noire to the north and the Aude valley to the south, across a vast natural amphitheatre open to the Mediterranean sun. Château Mignan farms its vines organically (Ecocert certified since 2012), on the high clay-limestone terraces of Siran — pebble and clay soils that keep the vine in check, hold on to freshness and give wines with real tension. Altitude and the day-to-night temperature swing preserve aromatics, even in hot vintages.

Our reds blend Syrah, Grenache and old-vine Carignan — sun-loving varieties that give structured, generous wines built to age. Our whites, made in small quantities, bring together Grenache Blanc, Marsanne, Roussanne and Vermentino for fresh, aromatic wines. A pale, bright rosé completes the range.

The estate is regularly decorated in this appellation: the Aurus cuvée earned 3 stars in the Guide Hachette 2025, a Gold medal at the Vignerons Indépendants 2024 and a Gold medal at the Challenge Millésime Bio 2024. See the full list of awards.

Cellaring and serving

The estate's ageworthy reds will keep for several years; the whites and rosé are best drunk young, within two to three years. Serve the reds at around 16-17 °C, the whites and rosé between 8 and 11 °C.

Frequently asked questions

What is the difference between AOP Minervois and AOP La Livinière?
La Livinière is a red-only cru located inside the Minervois area, with a more demanding rulebook: lower yields and compulsory ageing. See our La Livinière collection.

Are the wines genuinely organic?
Yes. The whole estate has been certified organic by Ecocert since 2012.

Does Minervois also produce white and rosé?
Yes — unlike La Livinière, which is reserved for reds, the AOP Minervois allows all three colours.
