The Château Mignan cottage sits on the estate itself, in Siran (Hérault), at the heart of the Minervois and the AOP La Livinière area. Details:

Friday evening: arrival and first glass

Arrival at the estate. Welcome, keys and settling in. Drop the bags and enjoy the terrace for a first quiet moment.

Aperitif on site. A bottle of Sola Rosé 2025 from the estate shop and a board of tapenade and olives on the terrace, watching the sun set between vines and garrigue.

Dinner. Two options:

  • Cooking at the cottage: simple and convivial. Rib of beef on the plancha, warm ratatouille and a bottle of Aurus 2023.
  • A restaurant in Olonzac or Caunes-Minervois (10-25 min): Le Bel Minervois in Olonzac (French cooking, closed Fridays) or La Cantine du Curé in Caunes-Minervois (bistro-brasserie, closed November to March).

Saturday: tasting, lunch and a walk

Breakfast on the terrace. Bring bread and pastries in advance, or stop at a bakery in a neighbouring village on the way.

Guided tasting at Château Mignan. Book ahead — allow about an hour to an hour and a half in the cellar with a guided tasting of the estate's cuvées. See what a tasting at the estate is like. Arrangements are confirmed when booking.

Lunch. A few addresses within 30 to 45 minutes (check opening days and seasons):

  • Le Comptoir Nature at the port of Le Somail (Saint-Nazaire-d'Aude) — organic vegetarian and vegan cooking, open April to October. On the Canal du Midi.
  • Maison Saint Crescent in Narbonne (2 Michelin stars, chef Lionel Giraud — booking well ahead is essential).
  • Auberge du Vieux Puits in Fontjoncouse (3 Michelin stars, chef Gilles Goujon — open March to November, for a big occasion).

Afternoon — a walk in the Cesse gorges. About 30 minutes by car, an easy path between Minerve and Cesseras. Swimming possible in summer in the natural pools.

Late afternoon — visiting Minerve. One of the "Most Beautiful Villages of France", perched on a rocky spur. Natural bridge, Cathar lanes, second-hand bookshops.

Back to the cottage.

Evening at the estate. Dinner on the terrace with a bottle of Les Trois Clochers 2023 and duck breast with figs. The silence of the countryside after the tourist roads.

Sunday: market, tasting and departure

Breakfast.

Morning — producers' market or a bike ride. Depending on the day, the Caunes-Minervois market (Friday morning) or the organic market in Carcassonne (Saturday morning). Otherwise, a bike ride along the Canal du Midi at Homps (day hire available on site).

Light lunch. On the cottage terrace with market produce. Heirloom tomato salad, fresh goat's cheese, dry charcuterie and a bottle of Pech Quisou 2025.

Afternoon — a second tasting at a neighbouring estate. On Château Mignan's recommendation, visit another estate in the La Livinière cru or the Minervois (booked in advance). You compare two different styles on the same terroir.

Loading the case. Collect your selection at the estate — or have it shipped directly if you are travelling light.

Variations by season

Spring (April-May)

The garrigue is in flower. Add the Aspres walk or a visit to the Caunes-Minervois cooperative cellar. Mild temperatures (18-22 °C), few visitors.

Summer (June-August)

Enjoy swimming in the Cesse, the evening markets at Olonzac and Caunes-Minervois (Thursday evenings in July and August), and dinner on the cottage terrace at sunset. Decant the reds systematically.

Autumn (September-October)

Harvest time. If you hit the right week, you see the work live — trailers, press, fermentation. The autumn colours in the vines are worth the trip on their own.

Winter (November-March)

Quiet, lower cottage rates, and privileged access to barrel tastings. Ideal for serious enthusiasts who want to understand ageing. Plan a cosy stay: fireplace, slow-cooked dishes, cellaring bottles.
