Tasting at the estate: what a visit to Château Mignan is like

A tasting at the estate is not a hurried glass standing up in a crowded tasting room. It is unhurried time, down in the cellar, seeing the barrels and tasting the cuvées one by one with the grower. At Château Mignan, we take our time. If you have never done it, here is what to expect.

Before you come: what to know

A few basics to prepare your visit to Château Mignan:

  • By appointment only. We welcome visitors in small groups to keep the conversation worthwhile. Get in touch for availability and arrangements.
  • Languages spoken: French and English.
  • Designated driver: recommended. We always provide water and a spittoon.
  • Dress: simple. Please avoid strong perfume, which masks the aromas of the wine.

The welcome at the estate

You arrive in Siran, in the northern Minervois, on the foothills of the Montagne Noire. The estate lies at the heart of the AOP La Livinière area. First step: a coffee (or a glass of sparkling water), a quick introduction to the history of the place, and the production philosophy — certified organic, plot-by-plot winemaking, long ageing on the cellaring cuvées.

Weather permitting, the introduction takes place outside, looking over the surrounding vines. It is also the moment when you tell us what interests you: powerful reds, aromatic whites, food pairings, buying for a personal cellar — the tasting adapts to you.

The walk through the cellar

Before the glasses, we go down into the cellar. Not for show: this is where the technical choices become visible. We show you:

  • The truncated concrete and wooden vats used for fermenting the reds — gentle extraction, prolonged contact with the marc, fruit expression preserved.
  • The ageing barrels, one to three wines old. Cuvées such as L'Œil du Temps 2022 spend several months there before bottling.
  • Bottles ageing on the lees or waiting to be labelled. You see the vintage that will be released next year.

This stage lasts 15 to 20 minutes. It is also the moment for technical questions: yeast choices, sulphite additions, maceration times, plot-by-plot blending.

The order of the tasting

We generally follow this sequence, from the lightest to the most structured:

  1. Pech Quisou 2025 — AOP Minervois white, a fresh Mediterranean blend. €10. Ideal for opening the palate.
  2. À Table - Blanc ! — AOP Minervois white, a fuller cuvée. €12.
  3. Sola Rosé 2025 — AOP Minervois rosé. €10. Aperitif or summer dishes.
  4. À Table - Rouge ! 2023 — AOP Languedoc red, a convivial table wine. €16.
  5. Aurus 2023 — AOP Minervois red, a balanced cuvée. €18.
  6. Les Trois Clochers 2023 — AOP La Livinière, the Languedoc's first red cru. €15.
  7. L'Œil du Temps 2022 — cellaring cuvée, long ageing. €28. Our signature wine.

For each glass we talk about the plot, the blend, the winemaking and the ageing potential. There is time to come back to a cuvée if you want — the pace is yours.

Food platters and pairings

On request when booking, the tasting can be accompanied by a platter of local Minervois and Languedoc produce (charcuterie, cheeses, bread, olive oil). Let us know in advance so we can suggest the right format.

For groups or special occasions, we also arrange tasting lunches with a menu built around the range. The reference format is the Déjeuner Gueuleton au Domaine, an occasional event around the fire and one long shared table, by prior booking. Details and dates on request via the contact page.

Buying on site and shipping

At the end of a tasting, most visitors leave with a few bottles. Three good reasons to buy at the estate:

  1. Estate prices. The same as on the website, with no middleman.
  2. Mixed cases. You choose bottle by bottle — handy for discovering the whole range.

What is the maximum group size?

We favour small groups to keep the exchange worthwhile. For larger parties we arrange a group tasting format by prior booking, on request.

Can you visit without tasting?

The cellar walk is an integral part of the visit, which includes tasting the estate's cuvées.

Can you stay overnight after a tasting?

Yes. The Château Mignan cottage lets you stay at the estate itself, which is particularly convenient if you are planning several estate visits across the Minervois over two or three days.

Are children welcome?

Yes, gladly. We provide grape juice for children, and the cellar visit often intrigues them. For very young children, plan a simple activity alongside — the tasting itself remains an adult moment.
