Aurus is the cuvée of maturity and character: a red from Château Mignan that is deep, refined and intensely more-ish. Born on the clay-limestone soils of the Minervois, it carries the strength and generosity of the South, with the touch of elegance that marks the estate's finest wines.

Terroir & grape varieties
A classic Languedoc blend — Syrah, Grenache and Carignan — from vines farmed under certified organic agriculture. Picked at optimal ripeness, the grapes give a dense, balanced juice that is a faithful reflection of the Minervois terroir.
Winemaking & ageing
Machine harvest, full destemming and traditional fermentation in epoxy-lined concrete vats. Frequent punch-downs for controlled extraction, then ageing in one- and two-year-old barrels to bring structure and roundness while letting the fruit speak.
Tasting note
A deep purple robe opens onto a generous nose of black fruit, blackcurrant, morello cherry and sweet spice, with notes of undergrowth and oak. The palate is ample, concentrated and silky: powerful and elegant at once, with a long, savoury finish. A wine of real character, built for pleasure and for the cellar.
Food pairings
Serve with a grilled rib of beef, game in sauce or a beef bourguignon. Just as good with a charcuterie board or strong cheeses. Aurus is the bottle you open when the meal deserves it.
